  1. Chicken (we used two whole breasts sliced thin)

For Breading

  1. 1/8 of a cup of rice flour (we used a Betty Crocker flour blend)
  2. 1/6 cup gluten free Italian bread crumbs
  3. Rosemary
  4. Basil
  5. Oregano
  6. Dash Onion and Herb seasoning
  7. Cinnamon
  8. Stevia
  9. Ginger
  10. Paprika
  11. Sea Salt
  12. Olive Oil
  13. Egg Whites for dredging chicken


  1. Preheat oven to 425 degrees
  2. Mix all spices / dry ingredients together well in a large bowl
  3. Turn stove on medium high heat, and add small amount of olive oil to oven safe pan large enough to hold your chicken
  4. Dip chicken breasts in bowl of egg whites, then directly into the breading/spice mix. Coat both sides of chicken evenly and put in hot pan
  5. Repeat breading steps for all pieces of chicken
  6. Cook chicken for approximately 3 minutes on each side so breading turns golden brown.
  7. Place pan with chicken in oven for approximately 10 minutes to ensure it’s cooked fully through.  After 10 minutes you can make a small slice in the chicken to ensure it is cooked through. If not done leave in an additional 2-3 minutes and re-check.
  8. When done, remove from oven and plate
