
INGREDIENTS:
- 2/3c quick oats
- 1c vanilla muscle egg egg whites
- 1/2 tsp pumpkin pie spice
- 1/4 tsp baking powder
- Pinch of salt
- Dash of vanilla extract
- 4-5 drops of apple pie Capella drops
DIRECTIONS:
-Pre-heat oven to 350°
Mix all ingredients well (I use a shaker cup), and pour into a baking dish sprayed with Pam. Bake for 45 min, then let cool for 10 min before serving.
This is one of my favorite weekend or make ahead breakfast ideas. If you don’t have muscle egg, you can substitute with regular egg whites you will just need to add Stevia to sweeten. I’ve made this with apple pie spice, pumpkin pie spice, plain cinnamon and even Cocoa powder. Top your baked oatmeal with Walden Farm pancake syrup, strawberry jam, PB2 mixed with a little almond milk to make a glaze, or even chocolate syrup if you dare. This is an incredible base to make any flavor combination you’d like. If you want to try a break ahead version, you can quadruple all the ingredients and place in a 9 x 9 pan. Cut into four squares and refrigerate. This is delicious chilled as well as hot right out of the oven. Think like a warrior, and be one of those people that can say #myfooddoesntsuck!
